Assist Executive Chef with the daily operation of department, including supervision of food production and associates.

Responsibilities:
  • Menu planning, recipe updating, and creation of daily specials.
  • Monitor the quality of food received in the kitchen and ensures proper standards of food preparation, rotation and storage.
  • Monitor kitchen stock levels and order when required.
  • Execute and plate parties or functions.
  • Assist in establishing recipe specifications, plate presentations, and creating visual food displays for Banquet and Outlet functions.
  • Assist in the training and orientation of all cooks.
  • Develop daily production sheets and ensure work is delegated and accomplished.
  • Prepare food by following written recipes and verbal instructions
  • Prepare dishes by following the methods of preparation and observe quality of product by viewing color, taste, texture, portion size and appearance.
  • Assisting with scheduling and payroll for all culinary employees.
  • Adhere to all standards set forth by the chef and management team.
  • Maintain a clean and safe environment by implementing all sanitation codes and appropriate food handling procedures proper storage procedures.
  • Contribute to team effort by accomplishing related results as needed and displaying respect and courtesy to all employees and positive demeanor at all times.
  • Maintain records of food costs, consumption, sales and inventory

Requirements:
 
  • Safe food handling certification.
  • Proven success in a similar role and environment.
  • Strong computer skills and high attention to detail.
  • A self-starter with proven initiative.
  • Exceptional presentation skills, both verbal and written.
  • Ability to work collaboratively with hotel sales and service teams.
  • Previous experience with Micros RES3700 is a strong asset
  • Previous experience with Hilton brands is a strong asset
  • First Aid / CPR certification is a strong asset
