This key position works with our Sous Chef and team to deliver an exceptional culinary experience to our group, retreat and wedding guests.

The Oceanstone Head Chef is responsible for overseeing the culinary team at our resort and the hands on timely and accurate preparation of food for the resort and for maintaining a level of professionalism & teamwork in the kitchen.
QUALIFICATIONS:
- Minimum of 5 years’ experience in a fast banquet, hotel/resort kitchen or similar in a supervisory role.
- Must be obsessed with food and have a keen interest in the culinary arts
- Must have or working toward Red Seal or equivalent
- Ability to maintain food quality and presentation standards within a consistency-based framework
- Must have experience leading a culinary team
- Must have a working knowledge of food costing and menu development
- Excellent interpersonal and communication skills
- Must display attention to detail & creativity
- Ability to work independently and as part of a team effectively
- Line cooking and knowledge of fine dining an asset.
- Must be able to work in high paced, time sensitive environment and maintain professional attitude.
- Must have reliable transportation
- Long hours sometimes required
- Flexible schedule required in wedding season
- Previous experience in creating mutually beneficial supplier and partner relationships
Responsibilities
- Oversees kitchen and daily functions
- Ensures all menu items are prepared efficiently to customer/group requirements
- Ensures all mis en place & prep work is completed in a timely and efficient manner
- Ensures the cleanliness and proper storage of all food product
- To follow all appropriate provincial health regulations and food handling techniques
- Assume daily responsibilities according to schedule and business needs.
- Meet with clients and represent the property in a positive and professional manner
- Participate in weekly beo meeting and complete required ordering
- Check daily food requirements and prepare them accordingly.
- Ensure that refrigerators, freezers, working areas and kitchen are kept clean.
- Ensure that equipment is functioning, sanitized and that any maintenance is reported
- Ensure strict control of waste and portion and help to control food quality and cost using standard recipe methods, pictures and maintain low inventory.
- Attend appropriate meetings.
- Responsible for overall cleanliness of the kitchen including, sweep, mop, and wash down tables and general cleaning to ensure a clean and sanitary work place.
- Other duties as required.
