JOB SUMMARY
The position of Restaurant Chef exists to supervise all phases of receiving, storing, preparing, producing, service, and sanitation as dictated by the hotel restaurants. This position is an evening and weekend position to accommodate the needs of the restaurant’s business.
 
QUALIFICATIONS:
  • A culinary degree and at least 10 years of progressive experience in a hotel or a related field required.
  • Culinary Journeyman Red Seal certificate.
  • Minimum 2-3 years experience as a Sous Chef in a self standing restaurant or related field.
  • Must be comfortable with face to face contact with guests on a daily basis
  • Must be comfortable with media relations

DUTIES & FUNCTIONS:
  • Develop proper training and direction of departmental assistants who operate in compliance with company standards of quality, specification, portion control, recipes, employee relations, sanitation, etc. as outlined by company policy.
  • Understand daily forecasts and customer counts.
  • Assess food portion size, visual appeal, taste, and temperature of items served.
  • Observe company standards throughout the kitchen.
  • Direct and train all Chefs to ensure adequate operation in all outlets.
  • Advanced menu creation experience.
  • Review and approve payroll.
  • Supervise all Assistants in all phases of the food production function for all outlets.
  • Check food purchases for proper ordering, quality, and price structure.
  • Oversee daily activities such as preparation for all food items, sanitation of the outlets, receiving daily inventories, log on report, and food cost report.
  • Oversee entire kitchen staff.
  • Attend F&B, BEO and staff meetings.
  • Advanced computer skills
  • Marketing restaurant through social media and online websites
  • Interacting with guests by checking in on tables throughout shift on a regular basis
  • Communicate to Engineering any physical maintenance problems.
  • Other duties as required.
RATE OF PAY: Commensurate with experience
