The Food and Beverage Service Manager ensures profitability through various cost controls and manages all Food and Beverage Services in the hotel. In a an operation such as Twenty-Seven South at the Best Western Bridgewater Hotel and Convention Centre, the Food and Beverage Services Manager will have a 'hands on' role and will be involved in the day-to-day running of the operation, including meeting customer expectations, food and hygiene standards, cost controls and financial targets. Assist in planning new promotions and initiatives, keeping abreast of trends and developments in the industry such as menus, trends in consumer tastes and management issues will play an important role in contributing to business development. Specific Skills: • Compliance of with regulations of the Nova Scotia Alcohol and Gaming authority • Ensures health and safety rules are followed and enforced throughout the restaurant and catering division, monitoring quality standards. • Provides leadership; recruits and assesses the team. • Providing and facilitating appropriate training and performance appraisals • Ensures smooth operations throughout the various departments of the food and beverage division including Twenty-Seven South Restaurant, Lounge and hotel catering • Providing fluid and open communication between hotel and catering/kitchen staff • Participation in weekly Food and Beverage Operations meetings • Works closely with Catering Coordinator to execute all hotel catering functions and special events to oversee and execute catering events • Dealing with staffing and client issues; • Interacting with hotel guests, clients and suppliers as part of 'front of house' role • Ensures division’s profitability by balancing food, inventory and department costs • Helps to set budgets and establish financial targets and forecasts with hotel General Manager • Monitors the quality of the product and service provided • Responsible for inventory controls and reporting for restaurant/catering operations including food, liquor, supplies and equipment • Managing the payroll and monitoring spending levels • Maintaining stock levels and ordering new supplies as required
